Persian Noodle Soup Recipe

Ingredients

  • 3 lrg Onions, peeled and thinly sliced
  • 3 Tbsp. Oil
  • 2 tsp Salt
  • 1/2 tsp Freshly grnd black pepper
  • 1 tsp Turmeric
  • 10 c. Water
  • 1/4 c. Dry red kidney beans, washed and soaked in cool water for 2 hrs and liquid removed
  • 1/4 c. Dry navy beans
  • 1/4 c. Dry chickpeas
  • 1/2 c. Lentils
  • 1/2 c. Beef broth, preferably homemade
  • 1/2 c. Coarsely minced fresh chives or possibly scallions
  • 1/2 c. Minced fresh dill
  • 1/2 c. Coarsely minced fresh parsley
  • 6 c. Spinach, washed and minced Or possibly
  • 3 c. Frzn spinach, minced
  • 1 x Fresh beet, peeled and diced in 1/2" pcs
  • 1/2 lb Persian noodles (reshteh) Or possibly
  • 1/2 lb Linguine noodles
  • 1 Tbsp. All-purpose flour
  • 1 c. Liquid whey (kashk) Or possibly
  • 1/4 c. Wine vinegar
