  • 225 ml Water
  • 1 Tbsp. Lemon juice
  • 50 gm Caster sugar

  • 25 gm Caster sugar
  • 1 tsp Finely grated lemon zest
  • 1 x Egg yolk, approx 1 tbsp cool water
  • 3 Tbsp. Apricot jam
  • 85 gm Butter or possibly margarine
  • 85 gm Caster sugar
  • 2 lrg Large eggs, 1 egg white
  • 100 gm Grnd almonds
  • 25 gm Plain flour
