Caponata & Mozzarella Sandwiches Recipe

Ingredients

  • ¼ cup olive oil
  • 1 celery stalk, chopped
  • 1 eggplant, medium dice
  • 1 red bell pepper, medium dice
  • 1 medium onion, chopped
  • 1, 14 oz can diced tomatoes
  • 3 Tbs raisins (black or white)
  • ½ tsp dried oregano leaves
  • ½ cup red wine vinegar
  • 2 tsp sugar
  • 1 Tbs drained capers
  • 1 loaf ciabatta or other rustic loaf, cut crosswise into 6 equal pieces
  • 2 garlic cloves, peeled
  • 6 slices (1/3”) drained fresh mozzarella
  • Salt and pepper, to taste
