- 2 whl cloves
- 8 c. water
- Â Â Salt to taste
- Â Â Freshly-grnd black pepper to taste
- 2 Tbsp. pork fat softened
- 1/4 lb pancetta finely minced
- 1 x onion finely minced
- 2 Tbsp. all-purpose flour
- 1 c. Brown Chicken Stock warm, (see recipe)
- 3 lrg potatoes peeled, and
- Â Â cut into 1/4" dice
- 2 x red bell peppers seeds, stems,
- Â Â and pith removed, coarsely minced
- 2 Tbsp. extra-virgin extra virgin olive oil
- 1 x garlic clove finely minced
- 1 Tbsp. white wine vinegar
- 2 Tbsp. capers rinsed
- 1 Tbsp. sugar
