Pork Medallions In Asparagus Mushroom Sauce Recipe


  • 2lbs pork tenderloins, sliced into 1 1/2 inch medallions
  • 4T butter(or 2T each of butter and olive oil)
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 8oz fresh mushrooms, chopped
  • 1lb fresh asparagus, trimmed and cut into about 1 inch pieces
  • 1-2 cups chicken stock
  • 1 cup heavy cream
  • 2T Dijon or whole grain mustard
  • 1/4 cup capers and 2t juice from the bottle
  • kosher or sea salt and fresh ground black pepper
