- 50 gm butter plus some for the toast
- 20 x chestnut mushrooms
- 1 x salt and black pepper
- 1 x onion minced
- 1 clv garlic crushed
- 2 sprg thyme leaves only
- 1 x level tbsp flour
- 1 Tbsp. brandy or possibly a dash of balsamic vinegar
- 1 Tbsp. dijon mustard
- 250 ml chicken or possibly vegetable stock
- 3 Tbsp. sour or possibly double cream
- 4 slc toast to serve
