Jambalaya #4 (redoux) Recipe

Ingredients

  • 1 lb Shady Brook(r) warm Italian turkey sausage sliced
  • 1 tsp oil
  • 2 lrg onions minced
  • 2 x cloves garlic chopped
  • 2 lrg green bell pepper minced
  • 1 lrg red bell pepper minced
  • 1 lrg yellow bell pepper minced
  • 1 c. minced celery
  • 1 c. dry white wine
  • 1 x 10 oz bag sliced okra
  • 40 ounce stewed red ripe tomatoes in juice, not puree.
  •     Reserve juice (*see note).
  • 1/2 c. pearl barley
  • 1/2 c. brown rice
  • 2 c. tomato juice (from reserved juice)
  • 1 1/4 c. liquid broth or possibly water
  • 1 dsh Worcestershire sauce
  • 1 tsp dry rosemary crushed
  • 1/2 tsp allspice
  • 1/2 tsp cloves
  • 1 tsp cayenne pepper
