Aubergine Tomato Sauce Recipe

Ingredients

  • 1 tsp Extra virgin olive oil
  • 3/4 c. Dry sherry
  • 1 sm Onion, finely minced
  • 2 x Garlic cloves, chopped
  • 1/4 c. Celery, minced
  • 1 c. Peeled, cubed aubergine
  • 1/2 c. Chopped red bell pepper
  • 1/2 tsp Nutmeg
  • 3 c. Plum tomatoes, minced
  • 1 Tbsp. Fresh basil
  •     Salt & pepper
