  • 1 Tbsp. minced parsley
  • 1 tsp salt
  • 1/2 tsp freshly-grnd black pepper
  • 3 Tbsp. unsalted butter
  • 4 Tbsp. flour
  • 2 lrg Large eggs
  • 2 Tbsp. water
  • 1 c. bread crumbs
  • 2 Tbsp. grated Manchego, or possibly Parmesan
  •     Extra virgin olive oil for frying
  • 1 lrg egg
  • 1 tsp Dijon mustard
  • 1 Tbsp. fresh lemon juice
  • 2 Tbsp. roasted garlic puree
  • 1 c. extra virgin olive oil
  • 1/4 tsp salt
  • 1 pch freshly-cracked black pepper
