- 1/4 c. Minced shallots (scallions), white part only
- 3 Tbsp. Thinly sliced green shallot (scallion) tops
- 2Â 1/2 Tbsp. Minced celery tops
- 2 Tbsp. Finely chopped parsley
- 1 Tbsp. Finely chopped garlic
- 1/2 c. Minced crawfish tails (about 24 tails)
- 1/4 c. Crawfish fat
- 1Â 1/2 c. Whole crawfish tails (about 30 tails)
- 1Â 1/2 x -(up to)
- 2 quart Cool water (depending on how moist the tails are)
- 1 Tbsp. Salt
- 1/4 tsp Freshly grnd pepper
- 1/2 x -(up to)
- 5/8 tsp Cayenne
- 2 whl bay leaves, broken in half
- 1 tsp Dry thyme
- 4 whl cloves
- 12 whl allspice
- 1/2 tsp Mace
- 1 lb Crawfish tails
