- 8 medium squid
- 1-1/2 cups fresh bread crumbs (I use Panko)
- 1/2 cup Pecorino Romano cheese
- 3 Tbsp. Fresh Parsley, chopped
- 1 large egg lightly beaten
- 1/4 cup olive oil
- 2 cloves garlic, chopped
- 1 medium onion, minced
- 8 medium fresh plum tomatoes (I roast mine or drop in boiling water to remove skins)
- 1/2 cup dry red wine
- Sea salt and fresh black pepper to taste...
