Artichoke Risotto Recipe


  • 6 x or possibly 7 artichokes
  •     Juice of 1 lemon
  • 3 Tbsp. butter or possibly extra virgin olive oil
  • 1/2 med onion, diced
  • 2 c. arborio rice
  • 6 c. boiling water or possibly vegetable stock
  •     Salt and freshly grnd black pepper, to taste
  • 1 Tbsp. fresh parsley, finely minced
  • 4 Tbsp. Parmesan or possibly Pecorino cheese
