Greens And Potato Torta Or Galette Recipe

Ingredients

  • 3/4 lb small boiling or possibly new potatoes peeled
  •     (such as baby Yukon Gold)
  •     Salt to taste
  • 2 lb greens - (to 2 1/2) see * Note
  • 2 Tbsp. extra virgin olive oil
  • 1 x onion minced
  • 2 lrg garlic cloves chopped
  • 1/2 c. minced Italian parsley
  • 2 Tbsp. minced fresh basil
  •     Freshly-grnd black pepper to taste
  • 1 c. ricotta or possibly low-fat cottage cheese
  • 2 x Large eggs beaten
  • 2 Tbsp. lowfat milk
  • 1/2 c. grated Gruyere cheese - (tightly packed)
  • 1/4 c. grated Parmesan - (1 ounce)
  • 1 dsh freshly-grated nutmeg
  • 2 tsp active dry yeast
  • 1/2 c. lukewarm water
  • 1/2 tsp sugar
  • 1 x beaten egg room temperature
  • 1/4 c. extra virgin olive oil
  • 2 c. unbleached flour - (to 2 1/2)
  •     (or possibly use half whole-wheat and half unbleached flours)
  • 3/4 tsp salt
