- Â Â Freshly-grnd black pepper to taste
- 1 c. ricotta or possibly low-fat cottage cheese
- 2 x Large eggs beaten
- 2 Tbsp. lowfat milk
- 1/2 c. grated Gruyere cheese - (tightly packed)
- 1/4 c. grated Parmesan - (1 ounce)
- 1 dsh freshly-grated nutmeg
- 2 tsp active dry yeast
- 1/2 c. lukewarm water
- 1/2 tsp sugar
- 1 x beaten egg room temperature
- 1/4 c. extra virgin olive oil
- 2 c. unbleached flour - (to 2 1/2)
