Harissa Sauce Recipe

Ingredients

  • 4 x Or possibly 5 fresh warm red chiles, or possibly 10 dry red chiles
  • 3 x Or possibly 4 garlic cloves
  •     Salt
  • 3 c. Aromatic Broth
  • 2 Tbsp. Chopped cilantro
  • 3 1/2 x To 4 lbs chicken parts, fat removed
  •     Turkey neck, giblets (optional)
  • 2 Tbsp. Butter
  • 2 x Onions minced
  • 8 ct Pods, punctured
  • 3 x 2-inch cinnamon sticks
  • 10 x To 15 peppercorns
  • 8 x Cloves
  • 3 1/2 quart Water
  • 1 c. Chick-peas soaked
  • 4 x Strips orange rind
  • 1/2 tsp Saffron
  • 1 tsp Turmeric
  • 1 tsp Nutmeg
  • 2 Tbsp. Honey
  • 1 x cc Fresh ginger, sliced
  • 6 sprg parsley
  • 10 x To 15 sprigs cilantro
  • 1/2 lb Carrots, scraped, cut in chunks
  • 1 1/2 x Pumpkin, peeled, cut in chunks
  • 2 x Sweet red peppers, seeded, quartered
  •     Minced cilantro for garnish
