Grilled Vegetable Sandwiches Recipe

Ingredients

  • 2 c. finely minced broccoli
  • 1/2 c. finely minced onion
  •     few dashes each: basil, thyme, bl. pepper
  • 1/2 tsp salt
  • 2 Tbsp. butter
  • 3/4 c. grated cheese
  • 2 1/2 c. chopped eggplant
  • 1/2 c. finely minced onion
  • 2 Tbsp. butter, (or possibly butter plus extra virgin olive oil)
  • 1 sm clov garlic, crushed
  • 1/2 c. minced black olives
  •     juice from 1/2 lemon
  •     salt and pepper, to taste
  • 1 dsh cayenne
  • 3/4 c. grated cheddar cheese
  • 2 lrg bell peppers, sliced
  • 3/4 c. minced onion
  • 1/2 tsp grnd cumin, or possibly more
  • 1 Tbsp. butter
  • 1 Tbsp. extra virgin olive oil
  • 1 dsh cayenne, or possibly more
  • 1 sm clov garlic, optional
  •     salt and pepper, to taste
  • 1 c. grated cheese, mild type
  • 1 c. sauerkraut, liquid removed
  • 2 x tomatoes, sliced
  •     dijon mustard
  • 1 c. grated cheddar cheese
  • 2 c. zucchini, diced
  • 1/2 c. chopped onion
  • 1 x clove garlic, crushed
  • 1/2 tsp basil
  • 1/2 tsp oregano
  • 2 Tbsp. extra virgin olive oil
  •     salt and pepper
  •     fresh tomato, sliced
  • 1/2 c. grated parmesan cheese
