Autumn Roasted Vegetables Recipe


  • 3 x carrots, unpeeled, cut into 1-inch pcs
  • 9 sm white button mushrooms
  • 2 c. Brussels sprouts (cut in halves if large)
  • 1 med sweet potato, peeled and cut into 10-inch pcs
  • 1 Tbsp. extra virgin olive oil
  • 1 1/2 c. chicken or possibly vegetable broth
  • 1/4 tsp dry thyme
  •     Salt and freshly grnd pepper to taste
  • 2 Tbsp. finely minced pecans for garnish
