Ingredients

  • 1 x 9 inch pie shell, fully baked
  • 3 Tbsp. apricot jam
  • 3/4 c. plus 1 tsp. granulated sugar (divided)
  • 5 Tbsp. all-purpose flour
  • 1/4 tsp salt
  • 2 c. hot lowfat milk
  • 3 x egg yolks
  • 2 Tbsp. butter
  • 1 1/4 tsp vanilla
  • 1 1/2 c. shredded coconut (divided)
  • 1 c. whipping cream
  •     Bake pie shell according to package directions. Spread the jam on the bottom
  •     of the pie shell. Set aside.
