Ingredients
- Crust:
- 1 cup butter, softened
- 1 cup + 2 tbsp castor sugar
- 3 eggs
- 4 ½ cups flour
- Method:
- Cream butter and sugar together until smooth. Add eggs one at a time followed by flour. roll the dough into balls and wrap in a cling wrap. Leave to chill in the refrigerator for 2 hours before rolling in a 22cm tart pan. Trim all excess. Bake blind, covered with foil and filled with beans at 360F for 15 minutes. Cool.
- Filling:
- 3 large eggs, beaten
- ¾ cup castor sugar
- 1 tsp vanilla
- 7 tbsp flour
- Pinch of salt
- Zest of 1 lemon
- 400ml coconut cream + 50ml heavy cream
- 2 mangos, peeled and thinly sliced
- 2 big bananas, thickly sliced
- 1 tsp lemon juice
- 2 tbsp almond flakes
- 2 tbsp butter, softened
- 2 mangoes, peeled and thinly sliced
- apricot jam for glaze
