Mango Banana Custard Tart Recipe

Ingredients

  • Crust:
  • 1 cup butter, softened
  • 1 cup + 2 tbsp castor sugar
  • 3 eggs
  • 4 ½ cups flour
  • Method:
  • Cream butter and sugar together until smooth. Add eggs one at a time followed by flour. roll the dough into balls and wrap in a cling wrap. Leave to chill in the refrigerator for 2 hours before rolling in a 22cm tart pan. Trim all excess. Bake blind, covered with foil and filled with beans at 360F for 15 minutes. Cool.
  • Filling:
  • 3 large eggs, beaten
  • ¾ cup castor sugar
  • 1 tsp vanilla
  • 7 tbsp flour
  • Pinch of salt
  • Zest of 1 lemon
  • 400ml coconut cream + 50ml heavy cream
  • 2 mangos, peeled and thinly sliced
  • 2 big bananas, thickly sliced
  • 1 tsp lemon juice
  • 2 tbsp almond flakes
  • 2 tbsp butter, softened
  • 2 mangoes, peeled and thinly sliced
  • apricot jam for glaze
