Aush ( Noodles With Pulses, Meat And Yoghurt) Recipe

Ingredients

  • 2 c. Plain flour
  • 1 tsp Salt
  • 2/3 c. Cool water
  •     Additional flour
  • 1/2 c. Yellow split peas (daul nakhud)
  •     Cool water
  • 1 c. Canned kidney beans w/liquid
  •     Salt
  • 1 Tbsp. Oil
  • 2 c. Finely minced spinach
  • 1/2 c. Oil
  • 1 med onion, finely minced
  • 750 gm Grnd lamb or possibly beef
  •     Salt
  •     Freshly grnd black pepper
  • 1/2 c. Tomato puree
  • 1/2 c. Water
  • 1 1/2 c. Liquid removed yogurt
  • 3 tsp Dry mint, rubbed
  • 1/4 tsp Warm chili pepper, (or possibly more)
  • 1/4 c. Finely minced coriander
  •     Salt to taste
  •     Serves: 6
  •     Cooking time: 1 to 1-1/4 hrs
