Ingredients

For the Chicken

Cooking spray
1/2 cup unsalted, shelled pistachios
3 tablespoons black sesame seeds
2 teaspoons ground coriander
1 1/2 teaspoons ground cumin
1 egg
1 tablespoon water
1/4 cup flour
Salt and freshly ground
black pepper
4 boneless chicken breast halves (about 6 ounces each), skin removed

For the Carrots

1 1/2 tablespoons olive oil
1 teaspoon cumin seeds
6 carrots, sliced 1/4 inch thick on the diagonal
Salt and freshly ground black pepper
1/3 cup orange juice
1 1/2 tablespoons honey
2 tablespoons chopped fresh cilantro
