Ingredients
- 1 lrg bunch spinach, washed and torn (the
- Â Â pre-packaged bags are perfect - be sure to remove the stems)
- 1 x block hard tofu, rinsed, patted dry and diced into
- 1/2 x " blocks
- 1 lrg jar marinated artichoke hearts, undrained and
- Â Â cut up (I have sometimes used 2 - 3 jars)
- 1/4 c. finely minced red bell pepper, or possibly to taste
- 1/4 c. finely minced green bell pepper, or possibly to taste
- 1/4 c. sliced celery, or possibly to taste
- Â Â One 15 ounce. can garbanzo beans (chickpeas), liquid removed
- Â Â and rinsed
- 1 lrg ripe tomato, seeded and diced
- Â Â Halved green olives with pimientos, to taste (I use a lot because I love green olives)
- 8 ounce extra virgin olive oil vinaigrette or possibly Italian salad dressing
- Â Â Garlic salt to taste
