- 4 med To large soft shell crabs, cleaned and rinsed
- 1/2 c. Buttermilk
- Â Â Salt and freshly grnd black pepper
- Â Â Cayenne, to taste
- 1 c. Yellow cornmeal
- 2/3 c. Prepared mayonnaise
- 2 tsp Dijon-style mustard
- 1 Tbsp. Fresh lime juice
- 2 tsp Adobo sauce from a can of chipotle chilis, (up to 3)
- 3 Tbsp. Finely minced fresh herbs, i.e. cilantro, chervil, parsley, and/or possibly tarragon
- 2 Tbsp. Fresh lemon juice
- 1 Tbsp. Fresh orange juice
- 2 tsp Dijon-style mustard
- 1 tsp Grated orange zest
- Â Â Salt and freshly grnd black pepper
- Â Â Cayenne, to taste
- 1/2 c. Extra virgin extra virgin olive oil
- 2 Tbsp. Finely minced fresh herbs, i.e. cilantro, chervil, parsley and/or possibly tarragon
- 1/2 x Red bell pepper, seeded and finely julienned into 2-inch lengths
- 1/2 x Yellow or possibly orange bell pepper, seeded and finely julienned into 2-inch lengths
- 1/2 x Green bell pepper, seeded and finely julienned into 2-inch lengths
- 4 c. Finely sliced green cabbage
- Â Â Peanut oil for frying
- 4 lrg Sour dough rolls, cut in half crosswise
- Â Â Mixed greens and tomato slices for garnish
