Ham (or Bacon) And Bean Chowder. Recipe

Ingredients

  • 3 quarts good ham or chicken stock
  • 1 lb. navy beans, washed, picked over for rocks or discolored beans, and soaked in plenty of cold water overnight.
  • 1/2 lb slab bacon, cut into 1/4 to 1/2 inch cubes
  • 1/4 cup either butter, oil or bacon fat
  • 1 cup yellow onion, 1/4 inch dice
  • 2 ribs celery, 1/4 inch dice
  • 2 carrots, 1/4 inch dice
  • 1 clove garlic, minced
  • 1 tsp. herbs de provence seasoning
  • 1/4 tsp. cracked chilies
  • 2 bay leaves
  • 1 tsp. black pepper
  • 4 potatoes, peeled, 1/2 inch dice
  • 1/4 cup flour
  • 1/4 cup ketchup (don't you look at me like that, trust me)
  • 2 tsp. Worcestershire sauce
  • 1/2 cup heavy cream.
  • salt and more pepper to taste
