Ingredients
- 3 quarts good ham or chicken stock
- 1 lb. navy beans, washed, picked over for rocks or discolored beans, and soaked in plenty of cold water overnight.
- 1/2 lb slab bacon, cut into 1/4 to 1/2 inch cubes
- 1/4 cup either butter, oil or bacon fat
- 1 cup yellow onion, 1/4 inch dice
- 2 ribs celery, 1/4 inch dice
- 2 carrots, 1/4 inch dice
- 1 clove garlic, minced
- 1 tsp. herbs de provence seasoning
- 1/4 tsp. cracked chilies
- 2 bay leaves
- 1 tsp. black pepper
- 4 potatoes, peeled, 1/2 inch dice
- 1/4 cup flour
- 1/4 cup ketchup (don't you look at me like that, trust me)
- 2 tsp. Worcestershire sauce
- 1/2 cup heavy cream.
- salt and more pepper to taste
