- 7 ounce Ancho chiles
- 4 ounce Pine nuts
- 6 x Garlic cloves peeled
- 1 lb Ripe tomatoes sliced
- 2 whl cloves
- 1/4 tsp Cinnamon
- 1 pch Freshly-grated nutmeg
- 1 tsp Cumin
- 1 sprg Thyme stems removed
- 1 sprg Marjoram stems removed
- 1 Tbsp. Dry oregano crumbled
- 1/2 c. Extra virgin olive oil
- 2 tsp Sea salt
- 1/2 tsp Freshly-grnd black pepper
- 2 Tbsp. Brown sugar (to 3 Tbsp.)
- 10 c. Broth, from cooking meats (to 12 c.)
- 3 x Apples peeled, cored, and cut into chunks
