  • 2 1/2 lb Boneless pork butt
  • 3 whl Chicken breasts, bone-in cut into quarters
  • 2 lrg Yams unpeeled
  • 1 x Pineapple peeled, chunked
  • 3 x Ripe plantains in their peels
  • 7 ounce Ancho chiles
  • 4 ounce Pine nuts
  • 6 x Garlic cloves peeled
  • 1 lb Ripe tomatoes sliced
  • 2 whl cloves
  • 1/4 tsp Cinnamon
  • 1 pch Freshly-grated nutmeg
  • 1 tsp Cumin
  • 1 sprg Thyme stems removed
  • 1 sprg Marjoram stems removed
  • 1 Tbsp. Dry oregano crumbled
  • 1/2 c. Extra virgin olive oil
  • 2 tsp Sea salt
  • 1/2 tsp Freshly-grnd black pepper
  • 2 Tbsp. Brown sugar (to 3 Tbsp.)
  • 10 c. Broth, from cooking meats (to 12 c.)
  • 3 x Apples peeled, cored, and cut into chunks
  • 24 x Prunes pitted
