The Tuna Burger Recipe

Ingredients

  • 2 lb Yellowfin tuna fillets minced fine by
  •     hand, removing any sinew
  • 3 Tbsp. Finely-minced scallion
  • 2 Tbsp. Freshly-grated gingerroot
  • 2 tsp Dijon-style mustard
  • 1 Tbsp. Soy sauce
  •     Cayenne to taste
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  •     Vegetable oil
  • 1/2 c. Bottled mayonnaise
  • 1 Tbsp. Wasabi pwdr mixed with water
  •     to make a paste
  • 1 Tbsp. Fresh lime juice
  • 1 x Seedless cucumber peeled, halved,
  •     and very thinly sliced
  • 1 sm Red onion very thinly sliced
  • 2 Tbsp. Finely-minced pickled ginger see * Note
  •     (or possibly 2 tbspns grated fresh gingerroot)
  • 1/4 c. Seasoned rice vinegar
  •     (or possibly 1/4 c. white wine vinegar plus 1 tbspn sugar)
  • 4 x Brioche rolls or possibly other soft roll
