Apricot Couscous Recipe


  • 2 1/2 c. water or possibly orange juice or possibly apple juice
  • 1/2 tsp salt
  • 1 pkt vegetable stock pwdr
  •     Or possibly 2 tsp vegetarian "chicken" stock pwdr
  • 2 c. uncooked couscous
  • 2 x scallions, thinly sliced
  •     Or possibly 1/2 Tbs. dry chives
  • 8 x dry apricots, minced
  •     Salt and pepper, to taste
