Ingredients

  1. 3 1/2 tablespoons extra-virgin olive oil

  3. 1 tablespoon minced garlic
  4. Salt and freshly ground pepper
  5. 4 apricots, halved and pitted
  6. 1 cup apple juice or cider
  7. 1/2 cup red wine vinegar
  8. Pinch of sugar
  9. 1/2 pound sweet cherries, pitted (2 cups)
  10. 1 tablespoon minced shallots
  11. 1 tablespoon fresh lime juice
  12. 1 large fennel bulb, cored and very thinly sliced
  13. 4 boneless Pekin duck breasts (6 ounces each), skin scored in a crosshatch pattern
  14. 1/2 cup small arugula leaves
  15. 2 tablespoons minced chives
