Ingredients
- 1 x Aubergine, unpeeled & cubed
- 1/4 c. Green pepper
- 4 ounce Mushrooms and stems, liquid removed
- 1/3 c. Extra virgin olive oil
- Â Â Salt/pepper
- 1/4 c. Water
- 1/4 c. Capers
- 1 med Onion, minced
- 1/4 c. Celery, minced
- 2 x Garlic cloves, chopped
- 6 ounce Tomato paste
- 1/2 tsp Oregano
- 1/2 c. Stuffed green olives
- 2 Tbsp. Wine or possibly cider vinegar

Combine All Ingredients. Pour Into A 2 Qt Glass Casserole, Cover With Lid. Mix Well And Microwave For 10-12 Min. Stir Again And Microwave A Few Min More Till Aubergine Is Tender.…
