- Â Â Ghee: Clarified Butter
- Â Â Ginger: powdered use less
- Â Â Ginger: Powdered = 1/3 mace + 2/3 lemon peel
- Â Â Honey: in baking = 1 1/4 C sugar + 1/4 C more liquid
- Â Â Honey: Mustard = 2 Tablespoons honey + 3 Tb yellow mustard
- Â Â Honey: Butter = 1 Tablespoons honey + 3 Tablespoons butter creamed
- Â Â Lemon Peel: grated=equal amount of marmalade

- Â Â Mango: Peach with a little lemon and allspice
- Â Â Marjoram: oregano use less, thyme
- Â Â Marshmallows: 1 large=6 miniature, 11 large= 1 c.
- Â Â Masa: corn flour
- Â Â Mascarpone: cream cheese blended with a little butter or possibly heavy cream
- Â Â Mayonnaise: yogurt, lowfat sour cream
- Â Â Molasses: In baking 1 C=3/4 C white or possibly brown sugar plus 1/4 C liquid
- Â Â Mustard: Dry= 1T prepared
- Â Â Mustard: Warm Chinese=Colemans English dry mustard prepared with water
- Â Â Mustard: Prepared=1 t dry+1/2 t water+2 drops of vinegar

- Â Â Orange Peel: Lemon or possibly lime peel or possibly marmalade
- Â Â Oregano: marjoram, rosemary, thyme
- Â Â Paprika: Turmeric with cayenne pepper
- Â Â Parsley: Chervil, tarragon
- Â Â Pecans: Walnuts in smaller amounts
- Â Â Pimento: Sweet red pepper roasted and peeled
- Â Â Pine Nuts: Blanched peeled slivered almonds
- Â Â Prawns: Shrimp
- Â Â Prosciutto: Smoked ham hocks
