- 4 T butter
- 1 pound of shrimp, peeled and deveined, shells reserved
- 4 cups chicken broth
- 1 cup dry white wine
- 1 onion chopped
- 2 carrots, peeled and chopped
- 2 stalks of celery, chopped
- 2 T long grain rice
- 1 bay leaf
- 1 1/2 t. salt
- 1/4 t. cayenne pepper
- 1 can diced tomatoes
- 1 cup half and half ( I used the Fat Free version )
- 2 T sherry
- Crusty round loaves of bread for serving
