Albondigas (meatballs) Recipe


  • 1 kg Lean chopped beef
  • 2 x Large eggs
  • 2 Tbsp. Fresh breadcrumbs
  • 3 x Cloves garlic, peeled and
  •     Crushed
  • 1 Tbsp. Minced fresh parsley
  • 500 gm Spanish onions, peeled and
  •     Minced
  •     Salt
  •     Freshy grnd black pepper
  • 1 Tbsp. Plain flour
  • 3 Tbsp. Extra virgin olive oil
  • 2 sm tomatoes, skinned,
  •     De-seeded and minced
  • 1 sm glass dry white wine
  • 150 ml Chicken stock
