  • 2 med aubergines
  • 1/2 c. Vegetable stock
  • 2 x Onions, sliced
  • 1 c. Diced celery
  • 3/4 c. Tomato puree
  • 1/2 c. Vinegar
  • 2 Tbsp. Sugar
  • 2 Tbsp. Capers
  • 4 Tbsp. Raisins or possibly currants, plumped
  •     In warm water
