Couscous Des Legumes Recipe

Ingredients

  • 1 x Onion, coarsely minced
  • 4 x Garlic cloves, minced
  • 2 x To 3 Tbsp. extra virgin olive oil
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 1/2 tsp Curry pwdr
  • 1/2 tsp Coriander
  • 1/4 tsp Cinnamon
  • 1/4 tsp Turmeric
  • 1/4 tsp Powdered cloves
  • 1/4 tsp Grnd coriander
  • 1/4 tsp Grnd dry ginger
  • 3 x Tomatoes, minced (canned OK)
  • 6 c. Broth of choice
  • 1 sm Sweet potato, peeled, cut into 1 or possibly 2-inch chunks
  • 1 sm Carrot, peeled, cut into 1/2-inch slices
  • 1 med Or possibly 2 smallish new potatoes, cut in chunks
  • 1 sm To medium turnip, peeled, cut into 1-inch chunks
  • 1/2 head green cabbage, cut into chunks
  • 1 handf green beans, trimmed, cut into 2-inch lengths, or possibly:
  • 1/2 c. Frzn green beans
  • 2 x Zucchini, trimmed, cut into 3/4-inch slices or possibly chunks
  • 1 x Green pepper, stemmed, seeded, cut into strips
  • 1 c. Cooked, liquid removed chick-peas (canned OK)
  • 2 c. Couscous grains
  • 2/3 c. Raisins
  • 3 Tbsp. Butter
  • 1 Tbsp. To 2 tb orange flower or possibly rose water
