  • 1 lb zucchini
  • 2 1/2 c. water
  • 2 tsp salt
  • 1 x (or possibly more) cloves of garlic, chopped
  •     Small healthy pinch dry tarragon
  •     Freshly grnd black pepper, to taste
  • 1/2 tsp sugar (or possibly more to taste)
  • 2 Tbsp. white wine vinegar
  • 6 Tbsp. extra virgin olive oil
  • 1 lrg avocado
  • 12 x stuffed green olives
  •     Lettuce leaves
  • 4 sprg of watercress
