Ingredients

3 poached boneless skinless chicken breasts (about 1 1/2 pounds)

3 cups, low sodium chicken broth

1 1/2 teaspoon each dried thyme, oregano

1 teaspoon garlic powder

1 bay leaf

1 large mango, peeled and chopped

1 inch piece fresh ginger, grated

1 garlic clove, grated

2 green onions cut diagonally, green and white parts

1/2 cup sliced water chestnuts, drained

1/2 cup fresh mint leaves, chopped

2 tablespoons extra virgin olive oil

1/2 teaspoon Sriracha Asian chili sauce, or Sambal Oelek chili paste

1 fresh lime, juiced

12 Manoa lettuce leaves, or butter lettuce on the mainland

1 medium avocado

Kosher salt and fresh cracked pepper to taste
