Ingredients

  • 1/4 c. Unsalted butter
  • 3 x (9-10 inch) flour tortillas
  • 18 med Shrimp, shelled, deveined, tails removed
  • 36 x Scallops, about 1/2 lb total
  • 1/2 lb Lobster or possibly crab meat, liquid removed, all shell removed
  • 2 x Cloves garlic, chopped
  • 1 c. Fresh peas -or possibly-
  • 1 c. Frzn peas, thawed, undrained
  • 4 x Large eggs
  • 1 c. Whipping cream
  • 1/4 c. Dry sherry
  • 1/4 tsp Salt, or possibly to taste
  • 1/4 tsp Freshly grnd white pepper (to taste)
  • 1/2 c. Slivered Swiss cheese
  • 1 x Tomato, cut in thin wedges
  • 1 x Or possibly more fresh Jalapeno chiles, thinly sliced & seeded
  • 2 Tbsp. Chopped chives
  •     Freshly grated nutmeg
