  • 1 Tbsp. Extra virgin olive oil
  • 1 c. Julienne-cut red bell pepper
  • 1 tsp Dry basil
  • 1 tsp Dry oregano
  • 5 x Garlic cloves, chopped
  • 1 can Artichoke hearts, liquid removed and coarsely minced (14-oz)
  • 1 jar sliced mushrooms, liquid removed (2.5-oz)
  • 1 1/2 c. Shredded part-skim mozzarella cheese, (6 ounces)
  •     Cracked pepper, (optional)
