Louisiana Stuffed Squash Recipe

Ingredients

  • 2/3 c. Blackeyed peas, cooked, liquid removed and rinsed
  • 2/3 c. Kidney beans, cooked, liquid removed and rinsed
  • 2/3 c. Black beans, cooked, liquid removed and rinsed
  • 2 med Acorn squash
  • 2 tsp Extra virgin olive oil
  • 1 Tbsp. Garlic, chopped
  • 2 Tbsp. Red bell pepper, diced 1/4"
  • 2 Tbsp. Leek, diced 1/4"
  • 1/2 c. Apple, diced 1/4"
  • 2 x Mushrooms, thinly sliced
  • 1 Tbsp. Fresh cilantro, minced
  • 1/2 c. Tomato juice
  • 1 tsp Grnd cumin
  • 1 x Serrano pepper, dry
  •     Salt and pepper, to taste
  • 1/4 c. Monterey jack cheese, grated
  • 3 c. Cooked rice
