cut into 1" dice
2 tablespoons olive oil
1 medium yellow onion finely chopped
3 garlic cloves minced
2 bell peppers chopped - (2 cups)
(preferably red or yellow)
1 1/2 tablespoons finely-chopped fresh rosemary
8 smalls soy "sausages" thinly sliced
4 ounces fresh baby spinach coarsely chopped
4 lrg eggs
Chipotle powder (optional)
