Spice Mix:
- 1tsp ground fenugreek
- 1tsp ground cinnamon
- 2tsp ground cumin
- 2tsp ground coriander
- 1tsp ground turmeric
- 1/2 tsp fennel seeds
and:
- 500g chicken thigh fillets, cut into bite-size pieces
- 3-4 small green chillies (or to taste), finely chopped
- 150g spinach
- 1 onion, finely chopped
- 1 piece of ginger, thumb sized, finely chopped
- 3 large cloves garlic, finely chopped or crushed
- 2tsp tomato purée
- 1 can plum / chopped tomatoes - if they are whole plum ones, break them up in the pan
