Apple-crusted Pork With Crackling And Apple Sauce


Ingredients For the rub
  • 200g/7oz pork tenderloin

  • 1 tsp chopped fresh chives

  • 1 tsp chopped fresh coriander

  • 1 tsp chopped fresh mint

  • 1 tbsp olive oil

  • salt and freshly ground black pepper

For the apple crust
  • 50g/1¼oz fresh breadcrumbs

  • ¼ apple, chopped

  • 50g/1¾oz edam, chopped

For the crackling
  • 50g/1¾oz pork fat

For the apple sauce
  • 2 tbsp butter

  • 2 tbsp brown sugar

  • 1 apple, cut into 1cm/½in cubes
