Creamy Halloumi And Pork Pasta Bake With Greek Salad

Ingredients

Ingredients For the pork macaroni
  • 1 tbsp olive oil

  • 1 small onion, finely chopped

  • 2 garlic cloves, finely chopped

  • 200g/7oz pork mince

  • ½ chicken stock cube

For the sauce
  • 3 tbsp butter

  • 2 tbsp plain flour

  • 400ml/14fl oz milk

  • salt and freshly ground black pepper

  • 1 tsp grated nutmeg

  • 100g/3½oz halloumi cheese, chopped

  • 200g/7oz long macaroni pasta, cooked according to packet instructions, drained

For the Greek salad
  • ¼ Iceberg lettuce, shredded

  • 1 small red onion, finely sliced

  • 2 vine tomatoes, seeds removed, flesh chopped

  • 55g/2oz feta cheese, cut into cubes

  • handful rocket leaves

  • 6 black olives, stones removed

  • ¼ cucumber, cut in half lengthways, seeds scooped out with a spoon, flesh chopped

  • 2 tbsp chopped fresh coriander

  • 2 tbsp chopped fresh mint

  • ½ lime, zest and juice

  • 2 tbsp olive oil

  • salt and freshly ground black pepper
