  • 85g/3oz caster sugar

  • 3 tbsp olive oil

  • 1 onion, finely chopped

  • 1 sprig fresh thyme

  • 1 strip orange zest

  • 1.5kg/3lb 5oz ripe tomatoes,

  • seeds removed, flesh finely chopped

  • 8 basil or tarragon leaves, finely shredded

  • 1½ tsp sea salt

  • ½ tsp tabasco sauce
