Ingredients For the curry
  • 2 tbsp vegetable oil

  • ½ onion, sliced

  • 3 garlic cloves, chopped

  • pinch ground cumin

  • pinch ground coriander

  • pinch chilli powder

  • pinch curry powder

  • 3 cardamom seeds

  • 4 new potatoes, sliced

  • ½ tomato, chopped

  • 100ml/3½fl oz vegetable stock

  • 100g/3½oz monkfish fillet, chopped

  • 2 large handfuls spinach

For the flatbreads
  • 250g/9oz self-raising flour, plus extra for flouring

  • handful fresh coriander, chopped

  • water, to mix

  • 2 tbsp vegetable oil
