  • 1 large onion, halved and thinly sliced

  • pinch of sugar

  • 2 tsp balsamic vinegar

  • 4 rashers cured streaky bacon

  • knob of butter

  • 2 large or 4 small slices calf's liver

  • 2 tbsp flour seasoned with salt and freshly ground black pepper

  • 2 large or 4 small sage leaves

For the polenta
  • 110g/4oz quick-cook polenta

  • 600ml/1 pint 1fl oz hot vegetable stock

  • 50g/2oz finely grated parmesan

  • 3 tbsp double cream or crème fraîche
