Ingredients For the duck and coconut curry

  • 1 stick lemongrass, inner part only, chopped

  • 2 red Thai chillies, chopped

  • 3 cardamom pods, seeds only

  • ½ tsp ground turmeric

  • ½ 400g/14oz can coconut milk

  • ½ duck breast, cut into strips

  • 2 tbsp fresh coriander, chopped

  • ½ lime, juice only

For the sautéed bok choi
  • 1 bok choi, chopped

  • 3 baby shallots, chopped

  • 1 tbsp sesame seeds
