  • 1 tbsp olive oil

  • ¼ onion, finely chopped

  • 125g/4½oz basmati rice, cooked according to packet instructions

  • salt and freshly ground black pepper

For the paprika-poached smoked haddock
  • 1 tsp paprika

  • 100ml/3½fl oz milk

  • 100g/3½oz smoked haddock

  • sprig flatleaf parsley, to garnish
