  • 1.5kg/3lb 4oz clams, cleaned (discard any clams that remain open after rinsing)

  • 175ml/6fl oz white wine

  • salt and freshly ground black pepper

  • 2 tbsp chopped fresh flatleaf parsley

  • 50g/2oz butter

  • 1 onion, peeled, roughly chopped

  • 2 garlic cloves, peeled, finely chopped

  • 500g/1lb 2oz parsnips, peeled, roughly chopped

  • 2 fresh sprigs thyme, leaves only

  • 750ml/1pint 7fl oz chicken stock

  • 75ml/3fl oz double cream

  • 1 tbsp olive oil

  • 4 thin slices baguette, rubbed with a little oil and toasted
