For the pesto
  • handful fresh basil

  • 1 tbsp pine nuts

  • 30g/1oz smoked almonds

  • 1 garlic clove, peeled

  • 100g/3½oz parmesan, grated, plus extra shavings to serve

  • salt and freshly ground black pepper

  • 100-200ml/4-7fl oz extra virgin olive oil
