Chicken Roulade With With Saffron Potatoes And Honey, Walnut And Pine Nut Sauce

  • 6 rashers unsmoked streaky bacon, chopped

  • olive oil, for frying

  • 1 onion, peeled, finely chopped

  • 300g/10½oz chestnut mushrooms, wiped, chopped

  • 2 tsp chopped fresh sage leaves

  • salt and freshly ground black pepper

For the potatoes
  • 100g/3½oz unsalted butter

  • 2 banana shallots, peeled, chopped

  • 3 bay leaves

  • large sprig fresh thyme

  • large pinch saffron

  • 2-3 waxy potatoes, such as Desiree or Maris Piper, peeled, sliced

  • 550ml/19½fl oz chicken stock

For the sauce
  • 25g/1oz walnuts

  • 3 tbsp honey

  • 4 tsp Dijon mustard

  • 15g/½oz pine nuts
